Chia Seeds & Radishes

Welcome to the "Picking Ingredients Out of a Hat" blog! Inspired by Chopped, my fiancee and I decided it would be fun to create recipes using ingredients randomly drawn from a hat. I've always been a somewhat picky eater, so I felt that getting creative with our recipes and ingredients would be a great way for me to branch out and expand my palate.

Our first challenge: Chia Seeds & Radishes

We decided to incorporate the chia seeds into this challenge by making turkey burgers. We ground the chia seeds using a mortar and pestle, and mixed them into the ground turkey meat with the rest of our burger ingredients. In this recipe the chia seeds served as a substitute for eggs, helping to bind the meat together to form our burger patties.

For the radishes, we chose to slice them into thin strips, adding them to a broccoli slaw with a greek yogurt base. The crispiness of the radishes went well with the slaw, which we used to top our burgers to give them a nice crunch.

Here's a little video showing our results:

If you're interested in making these yourself, here's the recipe we used below, along with approximate nutrition information.
